Classic Apple Pie
Ingredients:
For the Pie Crust:
● 2 1/2 cups all-purpose flour

● 3/4 cup granulated sugar
● 1/4 cup light brown sugar, packed
● 1 teaspoon ground cinnamon
● 1/4 teaspoon ground nutmeg
● 2 tablespoons all-purpose flour
● 1 tablespoon lemon juice
● 1 teaspoon vanilla extract
For Assembly:
● 1 tablespoon unsalted butter, cut into small pieces (for dotting on top)
● 1 egg (for egg wash)
● 1 tablespoon milk (for egg wash)
● Additional sugar for sprinkling
Instructions:
● In a large bowl, combine the flour, salt, and sugar. Add the chilled butter cubes and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
● Gradually add ice water, one tablespoon at a time, until the dough just comes together.
● Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
● In a large bowl, toss the sliced apples with lemon juice to prevent browning.
● In a separate bowl, mix together granulated sugar, brown sugar, cinnamon, nutmeg, and flour.
● Add the sugar mixture to the apples, tossing until evenly coated. Stir in vanilla extract.
● Preheat the oven to 425°F (220°C).
● Roll out one disk of pie crust on a lightly floured surface to fit a 9-inch pie dish.
Transfer the crust to the pie dish.
● Pour the prepared apple filling into the pie crust, mounding it slightly in the center. Dot the filling with small pieces of butter.
● Roll out the second disk of pie crust and place it over the apples. Trim any excess crust and crimp the edges to seal the pie. Cut a few slits in the top crust to allow steam to escape.
● In a small bowl, whisk together the egg and milk to create an egg wash. Brush the top crust with the egg wash and sprinkle with sugar.
