What is an eggplant?

The eggplant, botanically referred to as Solanum melongena, is a species of plant in the nightshade family. It is closely related to tomatoes, peppers and potatoes. The eggplant is also known as the egg, since its fruit often has an ovoid shape. However, there are also varieties that are elongated or round.

The outer skin of the eggplant varies in color depending on the variety and degree of ripeness. It can range from deep purple to light purple or greenish-white. The flesh of the eggplant is white to cream-colored in consistency and contains numerous small seeds.

Eggplants have a mild and slightly bitter taste, which often becomes milder when cooked. Due to their porous structure, they absorb aromas well and are therefore ideal for various types of preparation.

Origin and history of eggplant

The exact origin of the eggplant has not yet been clearly clarified, but it is believed that it originated in India. From there, over the centuries, it spread to different parts of the world. The Arabs brought the eggplant to Spain in the Middle Ages, from where it spread further throughout Europe.

Recipes

Baked eggplant slices with garlic dip

Ingredients:

2 large eggplants

3 eggs

1 cup breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian herbs

Pepper

Salt

Olive oil for brushing

 

For the garlic dip:

1 cup Greek yogurt

2 cloves of garlic, finely chopped

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh parsley

Pepper

Salt

 

Preparation:

Preheat the oven to 200°C and line a baking tray with baking paper.
