Brussels sprouts with caramelized red onions

 

Cooking Time: 30 m

Servings: 6

 

Ingredients

1-1/2 red onions

6 oz. butter

1-1/2 tbsp red wine vinegar

salt and pepper

1-1/2 lbs Brussels sprouts

 

Directions

Step 1: Cut the onions into wedges and fry for 5-10 minutes in half of the butter on medium heat, until turn golden, but not burned.

 

Step 2: Combine the salt, vinegar, and pepper to taste.

 

Step 3: Reduce the heat and keeping sauté the onion while stirring. Set aside on a plate.

 

Step 4: Wash and trim the brussel sprouts and cut in half. You can fry them whole if they are small.

 

Step 5: Use the same frypan add more butter, place the brussel sprouts until they have turned a nice color and a little soft. Check by using a pin or knife. They're best served "al dente".

 

Step 6: Stir together with onion. Season with pepper and salt.

 

 

 

Low-carb tortillas

 

Cooking Time: 15 m

Servings: 3

 

Ingredients

1 egg

1 egg white

2-1/2 oz. cream cheese

3/4 tsp ground psyllium husk powder

1/2 tbsp coconut flour

1/4 tsp salt

 

Directions

 

Step 1: Preheat the oven to 400 Fahrenheit (200 Celsius).

 

Step 2: Use a hand mixer to whisk the eggs and egg whites until fluffy and keep beating for a few minutes. Place cream cheese and blend until the batter is smooth.

 

Step 3: In a small bowl, combine coconut flour, salt, and psyllium husk. Put flour mixture by one spoonful at a time and mix well. Let stand until the batter gets thick like pancake batter, for a few minutes.

 

Step 4: Use a spatula to spread the batter thinly (no more than 1/4 inch thick) on a baking pan lined with a parchment paper, spread into 2- 3 circles or 2 rectangles.
