INTRODUCTION

The invention of the pressure cooker is dated back as far as the seventeenth centuries ago. I grew-up seeing my parents fall so deeply in love with the pressure cooker, my mum’s whole cooking life revolves around the pressure cooker. Obviously for reasons I never knew back then. My mum used the pressure cooker to cook just about everything, simple because it’s simple, easy to use and convenient. As a kid, I love being in the kitchen with my Mum, the savory and lovely aroma will fill the kitchen air and always made me excited about meal time.

As a grown woman with my own family, now, I fully understand why my mum was so in love with the pressure cooker. My addiction knows no bound because of all its benefits and advantages. The modern day pressure cooker have many functions I have grown fond of, like sauté functions that allow you to brown food in the pot, with built in functions that turn your pressure cooker into rice coolers, meat, pastas boilers, yogurt functions and lots more.

One lovely thing about the pressure cooker is you don’t need to stay with your food while cooking, you can just add all your ingredients and go about with other chores and in no time, you will have a flavored and savory meals waiting for you.

The Instant pot is a life change for me, with my busy and tight schedule, it feels as if it’s a God sent. I can cook pasta that can be enough for the whole family, braise or steam vegetables, cook rice in few minutes or have a savory meal ready in no time. I can cook with my little budget, have my own space and time without staying in the kitchen all day. Over the years I have come to appreciate the work of the instant pot because it exceeded my expectations. I call it Jack of all trades.

HOW THE INSTANT POT WORKS

The Instant Pot comprises of three major parts—the cover, the inner pot and the outer pot. These three components work hand in hand to produce the kind of environment that boost quick cooking times, high pressures and high temperatures.

The cover helps create an air-tight seal by locking the food and inner pot inside the outer pot. It also function to complete the quick pressure release valves. The inner pot is the place where the food is seated inside of the outer pot. The outer pot is the pot motherboard house and the control panel, it is where you get the heat source, temperature, sensors and the pressure. When any button on the control panel is pressed, a signal is sent to the motherboard that switch on the heat source at the bottom of the inner pot. Because the pot is covered, sealed and air-tight, the air rapidly heats up; not allowing air to escape and the liquid turns to steam. This is what causes increased pressure between the outer pot and inner pot.

There is a flexible plate underneath the heat source. At the highest level tolerable air pressure and temperature, the flexible plate bends, at this stage the pressure sensor, underneath the bending plate, is signaled. Once pressure sensor is activated, the heat source shuts off. This is an instant pot safety measure to avoid risk of explosions due to dangerous high pressures. After this, the air cools and drops the pressure, the plate returns to its original stage and the pressure sensor is turned off, and the heat source is turned on once more. This constant heat cycling goes on until the final stage of cooking, when the pot finally beeps.

The duration and time of the heat pressure off and on cycles depends on the cooking time set or pre-programmed function you select on the control panel.

COMMOM INSTANT POT TERMINOLOGY

PC: Pressure Cooker

IP: Instant Pot (This is a brand name of electric pressure cooker)

Knob. The direction you direct the Steam Release Knob towards to release steam through the Steam Release Knob.

VENTING: A process of releasing the steam from instant pot through the Steam Release

SEALING: The process of turning the Steam Release Knob to “sealed” making sure steam does not escape so that the pot can come to pressure.

DEGLAZE: The method of removing any browned bits of food from the pot’s bottom after browning your meat. You can pour water, broth or onion, etc. to deglaze the brown bit from the bottom, while sautéing, you scrape off the bottom of the pot with a wooden spoon.

BURN MESSAGE: This is a signal you get from the pot if there is not enough liquid to bring the pot to pressure or contents of the pot are too thick, Also, if the bottom of the pot is not properly  deglazed before turning the pressure button, the food will scorch the bottom of the pot.

FAT DADDIO’S PAN: This is a brand name of anodized aluminum spring form pans, cake pans, and cheesecake push pans.

CONDENSATION CUP or COLLECTOR: There is a plastic ‘cup' attached to the back of

the pressure cooker designed to hold any condensation coming off the valve and steam release knob and also liquid drippings that flows through the channel the lids sits in.

SLING: A long folded wide strip of aluminum foil used in (PIP) Pot-In-Pot method of cooking to remove pans from the pot.

PIP: Simply means Pot in Pot. A method of cooking food when you have to place a pot into the instant pot and add water directly into the inner pot, place a  trivet/rack and place the pot on the trivet/rack.  (For example a cheesecake or quiche).  Usually Pot in pot method foods takes a longer cooking time compared to foods that are directly cooked in the inner liner.

ANTI BLOCK SHIELD: This is a perforated removable metal cover, its located on the underside of the lid that is over the steam release valve. It function to protect debris that clog in the process of building and releasing pressure from entering the valve (Pin).

STEAM RELEASE KNOB: Has a channel (The wobbly knob) with holes at the top that the steam passes through when the pot is building-up pressure and as it’s also releasing pressure. 

PIN: Can also be called the Float Valve, has a metal pin ( silver or red) in the lid, whenever the pot is at pressure, it pops up and also pin down the lid for safety until when all the pressure in the pot has been released, then the pin drops

and unlocks, indicating it's safe to open the lid. It’s never safe to try and force the lid open when the pin has not drop and unlock. You either turn the steam release knob to Venting (quick release), or let it naturally release the pressure, and wait for the pin to drop.

SEAL / SILICONE RING: A Silicone sealing ring is located under the instant pot lid.

The “gasket” helps to seal up the pot so it can come to pressure.

TRIVET / RACK: This is a metal rack that can be placed in the bottom of the pressure cooker. It is used in pot in pot to place dish on and keep food from directly touching the bottom.  (Mostly comes with a collapsible handles).

SAUT´E MODE: You can use this setting to sauté onions and brown meat, and warm up liquid etc. The sauté default time is 30 minutes, but you can set the heat level as it suits you, Low, Med or High.

YOGURT BUTTON: A function used to activate the boil, its part of the duty in the yogurt making process.

LP: Low Pressure.

HP: High Pressure.

KEEP WARM: The instant pot automatically switch to this mode once the cooking cycle is complete unless canceled. By default the warming process begins when the temperature of the contents drops to 140 degrees (F). The display counter will show L0 00, L0 01, L0 02, L0 03, etc. depending on how long the pressure has been 

naturally Released.

NPR/NR: Natural Pressure Release/Natural Release. Once the cooking cycle completes, the steam will be let out on its own through the steam release knob within a time frame such as a 15 minute NPR.

QPR/QR: Quick Pressure Release/Quick Release. Once the cooking cycle completes, you quick release by turning the steam release knob from sealing position to Venting, this will quickly release the pressure from the pot. Mostly used for foods that have a quick cook time, like as veggies. Never use a Quick Release for a full pot of soup, starchy foods or most meats, (When doing a quick release for pastas, don’t just do it all at once, but in small bursts to prevent the liquid and starch from spewing out of the steam release knob and messing up your kitchen!

Pot Base. This is the bottom of the pot that you place food and liquids in to cook.

INNER LINER: (A ceramic coated or stainless steel cooking pot that is placed into the Instant

WATER TEST: This is a procedure that helps new instant pot users start to get comfortable with their pot. It is done by test running with only water to confirm if it works properly.

MINI: A model of the Instant Pot that is a 3 quart size.

LUX: A line of Instant Pots that is usually more affordable. This line only has High Pressure, and no Yogurt function.

ULTRA: A Model of Instant Pot

DUO: A model of Instant Pot (also DUO PLUS)

EPC: Electric Pressure Cooker
