Chicken Lemon and Egg Soup
Ingredients1 chicken3 beaten eggs90g/3.17 oz of uncooked rice6 tablespoons of lemon juicesaltblack pepperPut the chicken in a pot. Cover with water. Cover and boil then cook on a low heat for 1 hour.Take the chicken and cut into pieces. Put the rice in the pot with the cooking liquid. Add some salt and pepper and cook on a low heat for 20 minutes until the rice is cooked. Take off the heat.Mix the eggs and lemon juice. Put some of the hot cooking liquid in the egg mix and whisk, then put the egg mix in the pot but off the heat. Whisk well, then add some salt and pepper.Serve the soup with the chicken pieces.
Spinach Pie
Ingredients400g/14.1 oz of spinach250g/8.8 oz of crumbled feta cheese1 finely chopped onion2 tablespoons of fresh chopped parsley1 tablespoon of chopped fresh dill7g/0.3 oz of chopped fresh mintpinch of nutmeg2 eggsolive oil10 filo pastry sheetsCook the onions in a pan in some olive oil for 6 minutes. Add the spinach leaves and cook for 4 minutes. Add the parsley, dill, mint and nutmeg and cook for 2 minutes. Mix the eggs with the crumbled feta cheese. Add to the spinach mix and add some more olive oil. Mix well. Get a square baking dish a brush it with olive oil. Add a sheet of pastry and brush with olive oil Add more more pastry sheets brushed with oil. Spread over the spinach mix. Add the last 5 pastry sheets each brushed with olive oil. Cut into 10 squares in the dish - but do not cut all the way to the bottom of the baking dish.Bake in preheated oven at 180C/350F. Cut into 10 pieces.
Feta Cheese Triangles
Ingredients198g/7 oz of feta cheese198g/7 oz of cream cheese1 beaten eggsaltblack pepperolive oilfilo pastry sheetsMix the cheese, egg and some salt and pepper in a bowl. Brush a filo sheet with olive oil. Put another sheet on top and brush with olive oil. Cut into 4cm/2 inch strips. Put some cheese mix on the end of the strip. Fold over to encase the cheese to make a triangle shape then keep going until the strip is used up. Repeat with the rest of the strips of the filo sheet, then repeat the process with more filo sheets.Brush the triangle pastries with olive oil.Put on a baking tray lined with parchment/greaseproof paper and cook in a preheated oven at 176C/350F for 25 minutes.
Fried Cheese
Ingredientsthick cheese slices such as Kefalograviera, Kasseri halloumi or provalonelemon juicedried oreganoblack pepperflourolive oil Dip the cheese slices in cold water. Cold then in flour, Fry in hot oil in a pan until golden on each side. Add some oregano. lemon juice and black pepper before serving.
