MINCED BEEF STOCK

Ingredients for 1000 g stock

500 g minced beef

20 g sunflower oil

1500 g water

1 package mirepoix, deep frozen

2 bay leaves

1 tsp juniper berries

1 tsp peppercorns

Salt to taste

1. Place minced beef and spices in the mixing bowl and blend for 6 seconds/reverse operation mode/speed 4. Push down to the bottom with the spatula. Add oil and brown it for 4 minutes/Varoma/speed 1.

2. Add water and cook for 60 minutes/100°C/reverse operation mode/speed 1.

3. Sift in a sieve and store for further use.

VEGETABLE STOCK

Ingredients for 1500 g stock

200 g carrots

1 garlic clove

2 onions, in half

1 stalk of leek

100 g celeriac, in pieces

1500 g water

1 tbsp olive oil

1 bunch of parsley

4 sprigs of thyme

10 peppercorns

2 cloves

2 bay leaves

Some salt

1. Chop parsley and thyme for 5 seconds/speed 8 in the mixing bowl and place aside in a bowl.

2. Peel carrot and cut in pieces. Peel onions and garlic clove and cut in pieces. Cut off root end and outer leaves of leek stalk and slice leek into rings. Wash and peel celeriac and cut in pieces.

3. Chop vegetables in the mixing bowl for 10 seconds/speed 7 and push mix down to the bottom with the spatula. Add oil and sweat mix for 5 minutes/Varoma/speed 1. Add chopped herbs, spices, and water and cook for 60 minutes/100°C/speed 1.

VEGETABLE STOCK POWDER

1 celeriac

4 carrots

2 stalks of leek

2 sprigs of lovage

2 sprigs of marjoram

2 bay leaves, dried

500 g sea salt

1 pinch of nutmeg
