Italian cuisine has developed over the centuries. Although the country known as Italy didn’t unite before 19th century, the cuisine can claim traceable roots dating back to the 4th century BCE. Food and culture were very important in those days as we are able to see from the cookbook (Apicius) which goes back to first century BC. Through the centuries, neighbouring regions, conquerors, high-profile chefs, political upheaval, and the discovery of the brand new World have influenced its development. Italian food began to form following the fall of the Roman Empire, when different cities started out to split up and form their own traditions. Many types of bread and pasta were made, and there is a variation in cooking techniques and preparation. The united states was split. Regional cuisine is represented by a number of the major cities in Italy. For instance, Milan (north of Italy) is well known because of its risottos, Bologna (the central/middle of the united states) is known because of its tortellini and Naples (the south) is well-known for its pizzas and spaghettis.

1 cup non-fat cottage cheese1 (15.5 ounce) can cannellini beans, drained 1 bunch fresh basil, chopped1 pint grape tomato, coarsely chopped 1 clove garlic, minced1 pinch salt and pepper to tasteDirections
In a food or blender processor, blend the cottage cheese, beans, basil, tomatoes, garlic, salt, and pepper until smooth.Preparation Time: 10 mins

Ingredients
4 small eggplant, thinly sliced1 pinch salt and freshly ground black pepper to taste3 tablespoons extra-virgin olive oils, divided, or more if needed 1/2 bunch fresh parsley, chopped1/2 bunch fresh basil, chopped 6 leaves fresh sage, chopped3 cloves garlic, minced5 tablespoons white wine vinegarDirections
Sprinkle eggplant slices with layer and salt on a plate. Set another plate at the top as a weight and set for thirty minutes aside. Rinse pat and eggplant dry with paper towels. Heat 1 tablespoon essential olive oil in a sizable skillet over medium heat and cook eggplant in batches until lightly browned, about 2 minutes per side, adding more essential olive oil as needed. Drain in some recoverable format towels.Layer sauteed eggplant slices right into a shallow dish. Sprinkle with parsley, basil, sage, garlic, salt, and pepper. Drizzle with remaining 1 tablespoon essential olive oil and white wine vinegar.Cover and marinate in the refrigerator for at least 8 hours.Preparation Time: 30 mins

1 (16-ounce) package pizza dough1 tablespoon all-purpose flour, or as needed for dusting 1/3 cup prepared pesto sauce6 thin slices provolone cheese2 ounces sliced prosciutto, torn into ribbons 1/3 cup diced banana peppersDirections
Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper or a silicone mat. Place pizza dough on a floured surface and roll into a rectangular condition between 1/8-inch and 1/4-inch thick, letting dough relax if it keeps springing back occasionally. Spread pesto at the top, leaving in regards to a 1-inch border around the edge. Top with provolone cheese evenly, prosciutto, and peppers.
