INTRODUCTION

Going for vegan is no longer the polarizing concept it once was, and it's not just full-time vegans who are interested in plant-based meals. Veganism appeals to some from a health perspective, there's ever growing evidence of the benefits of eating fewer animal products. For others, environmental or political beliefs drive their choice.

I think there are many reason why you may choose to prepare a vegan recipe, even just occasionally. Maybe you're snack for your loved one or you want to put more whole vegetables and grains to your diet meal, so you try eating vegan once a month or a week. Maybe you're simple intrigued by the ingredients and flavors in vegan cuisine. That why  we've published our first vegan cookbook, this suits the needs of everyone whether you're a strict vegan or not.

My Story How I Went Vegan

At home, I and my husband try to split home duties and responsibilities as evenly down the middle as possible. We tend to take turns cooking, alternating cooking duty, subject only to a few adjustments if the schedule warranted. Cooking is a very personal thing for the both of us, and we both grew up in households where cooking a meal for the whole family was a point of pride and the fact that dinner time was sacred, where the whole family would sit together and share a hearty meal was something we valued quite a lot.

Sadly, when my husband and I were younger and focused on our careers, we began to lose touch with those traditions. We often had business lunches and dinners out, and on the days where our schedules would allow us to share a meal, we would often eat out or bring home take out. We stopped our tradition of cooking home - cooked meals, and we began to rely on fast - food and restaurants in order to get our sustenance. This only got worse when our kids came along - though they were, and still are one of the greatest  joys in our lives, their presence meant that we had to spend a lot of time caring for them, and it became more and more difficult for us to be aware of what we were eating, what we were getting our nutrition from. For the sake of convenience, we began to rely on taking - out, or worse, frozen T.V dinners or even canned goods, something that we could simply heat up in few munites.

Needless to say, our health suffered greatly during this time. We began to gain a lot of weight - something that made us feel bad about ourselves, especially as we used to be fairly active - while maybe not athletes, we were always in pretty good shape. In addition to gaining weight, we began to feel worse and worse. We started to become more lethargic than usual, and we could barely gather up the energy or the willpower to play with our kids after work or to help them with their homework, much less cook a good meal for the family to share. This began a destructive feedback loop where we kept on relying more and more on convenient sources of food, and we began eating more and more on unhealthy food, until finally, one of our friends stopped by and remarked how much we had changed.

We owe a lot to that particular friend - while his offhand remark may have been just a passing observation, something that we would normally not take particularly seriously, with everything that we had going on, with our deteriorating health, that offhand, casual remark proved to be a catalyst for us to change. Just that remark got us to thinking - what did change, and why did we change so much? When we thought about it, we initially theorized that it was because of the arrival of our kids - but no, we had friends who were also raising families, but didn't end up in an unhealthy spiral-like we did. Besides, we had become complacent and unhealthy even before the arrival of the kids, and having the kids simply made it easier to give ourselves excuses for taking shortcuts and cutting corners on our health.

We started looking around for a solution to our problem - we knew that we had to start eating healthier and make a drastic change in our lifestyles. There were a lot of fad diets that we tried, but none really worked. A lot of them just weren't sustainable, they were too expensive, too difficult to stick to, or just plain ineffective. At our wit's end, we ended up reading up on vegan diets. We saw that it had a lot of benefits that we were looking for - better nutrition, would help us lose those excess pounds, improve our blood sugar levels, and even lower our risk of heart disease. Though we had never really previously thought about going vegan, we decided to give it a shot, and we started preparing vegan meals. At first, it was difficult to adjust - while we were not really so many dedicated carnivores, we were used to having a not - so - insignificant amount to animal protein in our diets. That change was the hardest. However, when we started getting used to the new flavor and texture profile, we immediately started seeing changes.

We started feeling more energetic, and gone were the perpetually sluggish feelings of yesterday. We notice that after a few weeks and months had passed by, we had to start buying new clothes, as our waistlines kept getting trimmer and trimmer. When we went to our doctors for our check-up, they were amazed that our lab results improved quite rapidly - we were no longer pre-diabetic, and we were in the best shape we had been for years.

This didn't really happen overnight, however, and as any conscientious vegan dieter will tell you, vegan diets are more than simply eating the plant-based foods such as vegetables, nuts, fruits, and grains. Vegan diets, like any other diet, have to be planned properly and adhered to in order for the dieter to get the best benefit from it. But once this is done, a girl does the benefits sure accumulate quickly. The hardest part was getting used to the elimination of animal proteins and one of the ways we dealt with it was to start easing them out of our diets. We started introducing vegan meals once a day, then twice a day, then eventually it was all - vegan, all - day, and we haven't looked back. We were able to ease into it by preparing simple and hearty vegan fare, to begin with - mostly soups. Soups have this innate appeal, as almost everyone can agree that a hearty soup feels filling and satisfying. In addition, soups that are vegan are not as jarring as another type of food that doesn't have animal protein, making it much easier for someone trying to move to a vegan diet to adapt. Soups were the gateway, the enabler to our vegan diet.

At the end of the day, how and why someone chooses to take up a vegan diet is up to them. From personal experience, however, we can recommend checking out a vegan diet for the sheer amount of health benefits it gives, and the way it makes you feel so energetic, clean and healthy.

For this reason, we'd created recipes that will remain a part of our day-to-day cooking. These are recipes we've come to crave and that we feel good about eating. Writing this cookbook made us better appreciate the potential of ingredients that had been there all along.

Full Practical of Vegan Meal

sweet potato coconut curry soup

Serving : 4

Preparation Time : 15 mins

Cook Time : 25 mins

Total Time : 40 mins

Ingredients:

2 tbsp further virgin oil

4 cloves of garlic

1/2 onion

1 one4-ounce coconut can (400 ml)

2 cups vegetable broth

1 tbsp syrup

1/2 tsp ground ginger

2 tbsp flavoring

1/2 tsp ground turmeric

1 cup diced sweet potato (265 g)

Salt to style

Toppings: bean curd, red cabbage, broccoli, and red bell pepper

Directions:
