Indonesian Fried Rice (Nasi Goreng)

Ingredients
1-1/2 cups uncooked white rice
3 cups water
1 serving cooking spray
4-1/2 eggs, beaten
1 tablespoon and 1-1/2 teaspoons vegetable oil
1-1/2 onion, chopped
1-1/2 leek, chopped
1-1/2 cloves garlic, minced
3 green chile peppers, chopped
3/4 pound skinless, boneless chicken breasts, cut into thin strips
3/4 pound peeled and deveined prawns
1-1/2 teaspoons ground coriander
1-1/2 teaspoons ground cumin
1/4 cup and 1 teaspoon sweet soy sauce (Indonesian kecap manis)
Directions
Step 1: Boil the rice and water in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer about 20 to 25 minutes, until the rice is tender, and the water has been absorbed. Spread on to a baking pan, and refrigerate 2 hours until cold.
Step 2: Over medium heat, heat a large nonstick pan. Spray with nonstick cooking spray. Place eggs, beaten into a pan. While the eggs begin to set, lifting up the edges of the set eggs to allow the uncooked egg to contact the hot pan. Flip it in one piece and cook about 30 seconds, until fully set. Slice into 0.5 inch strips.
Step 3: In a wok, over high heat, heat the vegetable oil. Add leek, onion, chile peppers, and garlic clove, stir together. Stirring about 3 -5 minutes, until onion is gentle. Mixing well with prawns, cumin, chicken, and coriander. Stir to cook for approximately 5 minutes.
Step 4: Add the omelet pieces, cold grain, and sweet soy spices, mix together. Cook about 3-5 minutes, chicken is no more pink and shrimp are bright pink.

Ingredients
1/2 cup and 2 tablespoons soy sauce
1/2 cup molasses
1 tablespoon and 1-1/2 teaspoons brown sugar
1/2 cube chicken bouillon
Directions
Step 1: In a saucepan, Add and mix chicken bouillon, soy sauce, brown sugar, and molasses together. Gradually heat until a slow boil is reached. Let cool completely after remove from heat. Pour in an airtight container, keep refrigerated.
