Introduction
Every living creature has a pH balance, which is a delicate balance of acid and alkaline chemicals. The human body is designed to be slightly alkaline — to have a pH slightly higher than 7. If you eat foods that drop your pH, or makes it acidic, your body goes into DEFCON 4 to bring it back to its normal, alkaline state.
Everything you do affects your pH. The good news? You can help your body control your pH through diet, which sets the stage for health and longevity. By eating a balanced acid alkaline diet, you take the extra work from your body so it can get back to its primary purpose — keeping you alive and well.
Although it’s not a common household term, the acid alkaline diet has been around for a long time. To some people, eating a pH balanced diet to improve wellness is synonymous with chin piercing and poodles wearing velour jumpsuits. In a word, they think it’s weird. However, they’re probably already eating a similar diet and calling it by its more common name, which is simply eatinghealthy.
Unless you leave your pH urine test strips on the counter, there’s nothing weird or alternative about this diet. Despite all the gimmicks surrounding pH dieting, the central concept is pretty straightforward — you eat foods that naturally help your body function at its best.

Carnivore, omnivore, herbivore, vegetarian — it doesn’t really matter what you were before you picked up Acid Alkaline Diet For Dummies. You — and everyone you know — can fit this diet into your life and improve your potential for health without counting every calorie and spending hundreds of dollars on specialty foods.
I don’t throw lists at you and tell you what you can and cannot eat. I show you why your body needs a specific blend of both acid- and alkaline-forming foods. You also see why certain foods and beverages are better for you and how to incorporate them into your diet — anytime and anyplace.
Conventions Used in This Book
Depending on where you jump in, you may notice that I use the words acid, acidifying, and acid-forming interchangeably. They mean the same thing and describe a substance that makes your pH more acidic.
Likewise, I also refer to any substances that turn the body more alkaline as alkaline-forming, alkalinizing, and base substances.
The following are some additional conventions to make your reading more pleasurable:
This book contains some words that may be unfamiliar. I’ve placed these words in italics and they’re followed with a definition.
Keywords or things that I think are vital to understanding the diet are in boldface.
Web sites are typed exactly as I found them in monofont. If a Web address needed to break across two lines of text during the printing process, rest assured that there are no any extra characters (such as hyphens) to indicate the break. So, when using one of these Web addresses, just type in exactly what you see in this book, pretending the line break doesn’t exist.
Foolish Assumptions
I’m guessing you sought out this book because you want to start eating a healthy pH balanced diet. That was my main assumption while I wrote it. I worked to impart the acid alkaline know-how without providing a full-on biochemistry lesson about pH and the body. I’m not a doctor or nutritionist, and I don’t play one on TV. I’m a registered nurse who has helped hundreds of people learn how to balance nutrition and lifestyle to promote health.
Another safe assumption: It’s a food book, so it has recipes. I provide four full chapters of acid-alkaline-balanced recipes that have been taste-tested on real people (other than my family).
Last assumption. I don’t have a big white hat and bachelor’s degree in culinary arts, and chances are, you don’t either. Perfect! The balanced recipes I provide may not end up in a five-star restaurant, but they are delicious and simple.
What You’re Not to Read
One of the best things about the For Dummies books is their proclivity for extraneous information. I put this information in something called sidebars, which are the grayed-out boxes of text. You don’t have to read them if you don’t want to, and they won’t impact your diet success. Other scientific tidbits are marked with a Technical Stuff icon. Again, skip ‘em if you’re in a rush to get pH balanced.
How This Book is Organized
Acid Alkaline Diet For Dummies is organized into seven different parts ranging from practical to yummy to scientific. Feel free to skip around if that’s how you process information! In the meantime, following is a summary of what you can find in each part.
Part I: Acid Alkaline Basics
If you’ve already started researching the diet, then you’ve probably come across conflicting (and frustrating!) information on the web. pH diets are largely misunderstood, with new web pages sprouting up daily to sell alkaline products. Unlike those web pages, this part introduces the concept of acid alkaline dieting without any pop-ups or ads.
I explain how to identify acid-forming versus alkaline-forming foods, allowing you to be self-sufficient in the grocery store and in restaurants. After all, who wants a list of foods to eat and not to eat stapled to their forehead? (If you do, there may be a Piercing Addictions For Dummies book available.)
Part I also includes pH testing methods and instruction for the scientific-minded folk. It’s a fun and inexpensive way to track your pH, but not completely essential.
Part II: Homeostasis: Keeping Your Body Happy
Okay, so what the heck is homeostasis and who cares? Homeostasis is a fancy word that describes the way your body keeps itself balanced and alive. This part includes the background on how the acid alkaline diet works. When you understand that everything you do — and don’t do — impacts your pH, you’re better prepared to manage it.
The chapters in this part illustrate all of the things that impact your pH. I wish I could say that diet alone can keep your body alkaline, but it’s just not true. Exercise, alcohol, and even your mood have the potential to make your body acidic, which sets the stage for disease.
Part III: Making the Switch: Starting Your Diet
Ready, set, get cooking! Even if you’ve never picked up a spatula, Part III is designed to help you prepare, shop, and stock up for success on the acid alkaline diet. It also covers why all those convenience-type meals are saturated in acid-forming ingredients and need to go bye-bye.
I realize that some of you may have an illness — hence the desire to want to eat healthier foods and help your body heal. This part contains valuable information about addressing your doctor and other health professionals as well as how some pills and supplements can adversely impact your pH.
Part IV: Let’s Eat!
Eyes of newt and wings of bat . . . okay, okay, I promise there’s nothing scary in Part IV. I know it’s extremely off putting to pick up a healthy cookbook and find nothing you recognize on the ingredients list. With a few tiny exceptions, you should recognize (and be able to pronounce) all of the ingredients in the recipes in this part.
Whether it’s breakfast or a midnight snack, Part IV contains dozens of recipes that are tasty and good for your pH. You won’t have a hard time following my instructions, even if you hate to cook.
Part V: Overcoming Obstacles to Your pH Goals
We all get stuck in a rut from time to time — it’s human nature! Part V gives you the tools to dig yourself out, no matter what your excuse may be. Business lunch meeting? Got it covered in Chapter 18. Upcoming big food holiday? Coping strategies are laid out in Chapter 19. Spouse unwilling to embrace the diet? Chapter 21 offers encouragement and suggestions. Find helpful tips for keeping your body balanced in any situation, including a whole chapter on weight loss challenges — that’s Chapter 20, in this part.
Part VI: The Part of Tens
I can’t take credit for this one. Part VI is a traditional For Dummies must-read (and is probably the most dog-eared portion of the book). I think of it as the most helpful part of the book, where you can find the bottom line on the best and the worst things you can do for your pH balance in three succinct chapters.
Part VII: Appendixes
If the book’s a cake, this part would be the frosting. You don’t have to read them, but both appendixes provide useful information that can help you along your journey to a balanced pH. The first appendix is a reference tool, providing pages of substitutes to help you exchange acid-forming foods and ingredients for more alkaline-friendly choices. The second appendix includes a metric conversion chart, which helps everyone speak the same language in the kitchen.

What do you want to know about? If you’re just dying to take a peek at the recipes, head to Part IV. Do you want to start testing your pH? Chapter 4 explains how to do that. Wherever you want to go is fine with me! Just flip to the section that calls to you and start reading. This book is meant to help you find out about the acid alkaline diet, not force you to read through from page one to the end. (I don’t teach 6th grade chemistry and I’m not going to quiz you!)
I do have one teeny piece of advice. If you know nothing of pH or how your body works, it may help to start with Chapter 5. It provides the basics of pH and a very light-hearted overview of how your body works to maintain it.
Part I
Getting to Know the Basics
In this part…
The acid alkaline diet is quite often misunderstood. Foods are not acidifying or alkalinizing based on their inherent pH — that’s where the majority of people get it wrong. Foods are acid forming or alkaline forming dependant on their mineral content during digestion.
This part provides an introduction to those foods and shows how they can adversely affect every system in your body. An acid build-up is no more than a stockpile of waste. Left unchecked, this waste can lead to disease and destruction. If the proof truly is in the pudding, you’ll see this for yourself after I show you how to test your body’s pH at the end of this part. It’s a fairly inexpensive way to show that you really are what you eat.
