Miso Soup with Shiitake Mushrooms

Total Cooking Time: 20 mins

Servings: 2

 

Ingredients

480 cups vegetable broth

2 shiitake mushrooms, thinly sliced

2 tablespoons miso paste

2 teaspoons soy sauce

2 tablespoons and 2 teaspoons diced firm tofu

1 green onions, trimmed and thinly sliced

 

Directions

Step 1:

Bring the veggie broth to a boil in a saucepan. Put the mushrooms, reduce high temperature to low, and simmer 4 minutes. Mix the miso paste and soy sauce mutually in a tiny bowl; enhance the broth together with the tofu and continue preparing for 1 minute extra. Pour the soup into bowls and top rated with the green onions to serve.

 

 

 

Japanese Fusion Guacamole

Total Cooking Time: 20 mins

Servings: 10

 

Ingredients

1-3/4 large avocados - halved, peeled, and pitted

7/8 lime, juiced

7/8 onion, minced

1-3/4 jalapeno peppers, or to taste, seeded and minced

8-1/4 shiso leaves, chopped

2-1/2 teaspoons minced fresh ginger root

3/4 teaspoon wasabi paste

1/2 teaspoon ground white pepper

1-3/4 drops hot pepper sauce (such as Tabasco®)

7/8 tomato, chopped

1 pinch salt and black pepper to taste

 

Directions

Step 1:

Place the avocados, lime juice, onion, jalapeno pepper, shiso leaf, ginger, wasabi paste, white colored pepper, and hot sauce right into a bowl. Mash until no large bits of avocado remain, or even to your preferred consistency. Lightly fold in the cut tomato and period to preference with salt and pepper before serving.

 

 

 

Juicy Chicken

 

Total Cooking Time: 30 mins

Servings: 4

 

Ingredients

1/3 cup and 1 tablespoon soy sauce

1/3 cup and 1 tablespoon sherry or white cooking wine

1/3 cup chicken broth

1/4 teaspoon ground ginger

3/4 pinch garlic powder

3/4 bunch green onions, chopped

13 ounces skinless, boneless chicken breast halves - cut into 2 inch pieces

 

Directions

 

Step 1:

In a small saucepan, combine the soy sauce, sherry, chicken broth, ginger, garlic powder and green onions. Bring to a boil, and immediately remove from heat. Set aside.

 

Step 2:

Preheat your oven's broiler. Thread chicken pieces onto metal or bamboo skewers. Arrange on a broiler pan that has been coated with cooking spray. Spoon 1 or 2 tablespoons of the sauce over each chicken skewer.

 

Step 3:

Place the pan under the broiler, and broil for about 3 minutes, until browned. Remove from the oven, turn over, and spoon more sauce onto each one. Return to the oven until chicken is cooked through and nicely browned.

 

 

 

Fly Stir-Fry

 

Total Cooking Time: 35 mins

Servings: 2

 

Ingredients

2 center cut pork chops, thinly sliced

2 tablespoons mirin (Japanese sweet wine)

2 tablespoons rice vinegar

1/4 cup soy sauce

1/3 cup mushrooms, sliced

1/2 green bell pepper, sliced

1/2 bunch green onions

1/2 clove garlic, minced

1-1/2 teaspoons minced fresh ginger root

1-1/2 teaspoons sesame oil

 

Directions

 

Step 1:

Slice pork while thinly as possible. Dealing with partially frozen chops makes this much easier. In a moderate bowl, blend pork with mirin, rice vinegar, and soy sauce. Cover, and allow marinate in refrigerator when you prepare the rest of the ingredients.
