Korean Bean Curd (Miso) Soup

 

Total Cooking Time: 35 mins

Servings: 2

 

Ingredients

1-3/4 cups water

1 tablespoon and 1-1/2 teaspoons denjang (Korean bean curd paste)

1-1/2 teaspoons garlic paste

3/4 teaspoon dashi granules

3-3/4 cups gochujang (Korean hot pepper paste)

1/2 zucchini, cubed

1/2 potato, peeled and cubed

2 ounces fresh mushrooms, quartered

1/2 onion, chopped

1/2 (12 ounce) package soft tofu, sliced

 

Directions

 

Step 1:

In a huge saucepan over moderate heat, incorporate water, denjang, garlic paste, dashi and gochujang. Bring to a boil and allow boil 2 minutes. Mix in zucchini, potato, mushrooms and onions and allow boil 5-7 minutes more. Mix in tofu and prepare until tofu has extended and fruit and vegetables are tender.

 

 

 

Kimchi Stew

 

Total Cooking Time: 46 mins

Servings: 2

 

Ingredients

1/2 teaspoon sesame oil

1/4 pound pork belly, cut into bite-size pieces

1 clove garlic, chopped

1 cup prepared dashi stock

1/2 cup kimchi, cut into bite-size pieces

1 tablespoon gochujang (Korean chile paste)

1-1/2 teaspoons gochugaru (Korean chile powder)

1/4 (12 ounce) package tofu, cut into 1/2-inch squares

1/2 cup zucchini, cut into bite-size pieces

1/2 small onion, sliced

1 green chile peppers, sliced

1 green onions, sliced

 

Directions

 

Step 1:

Warmth sesame oil in a huge saucepan over medium-high warmth. Add pork and prepare until no more pink in the guts, 5-7 minutes. Mix garlic into pork combination and prepare until fragrant, about 1 minute.

 

Step 2:

Stir dashi share and kimchi in to the pork mixture; deliver to a boil. Mix in gochujang and gochugaru; simmer until stew is definitely thickened somewhat, about 20 minutes.

 

Step 3:

Mix tofu, zucchini, onion, and green hot peppers into the stew; prepare until tender, about five minutes. Remove from warmth and garnish with green onion.

 

 

 

Shrimp Rice Soup

 

Servings: 4

 

Ingredients

2-2/3 cups white rice

3/4 pound shelled and deveined shrimp

1 tablespoon and 1 teaspoon sesame oil

1 tablespoon and 1 teaspoon rice wine

16 cups water

salt to taste

 

Directions

 

Step 1:

Rinse rice and reserve for 2 hours or perhaps until moistened.
