My first cookbook. Equally exciting, equally scary. This has been a vivid dream in my head for such a long time and now we’re here. An intense couple of months of exploring, writing recipes, taking pictures, editing, designing, writing copy, setting layout, typo and getting it all together. It’s been a blast and this wouldn’t have been possible without all the help, support and cheering I’ve received.

Thanks to mom, Karin, for being there from start to finish. Teaching me so much about working visually, working with InDesign, along the way while supporting me and cheering me on. You’ve been eating all my food, answering all my questions and giving me feedback 24/7. You’ve been taking my calls, rating pictures and giving honest opinions, sending me in the right direction. You’ve been such an inspiration and blessing, thank you for everything.

Thank you to my brother, Isak, for supporting me. Eating my food and cooking the recipes. You’ve been reading, correcting and giving me feedback. During this journey you have been giving me confidence, helping me believe I could do this. Thank you.

Introduction

So, here we are. When I started writing this cookbook I had a clear vision of what I wanted it to be, with a pinch of naivety assuming it would easily print onto paper. Now, after a lot of twists and turns, I would like to say that it has translated quite well, even though it has transformed into something else. Writing this book has truly been a journey for me, and I’ve gone through a variety of different concepts and ideas to create something cool and unique. In the end, I’ve scrapped most of those concepts and have instead soul searched deep inside of me to find the core of it all. What I’ve come up with is simple and maybe not that cool and unique, but it’s me.

For me, it’s all about YOU. I cook for my mom, my brother, my friends, my family, MYSELF. For new people in my life and for those I go way back with. For me, it’s the strongest and purest way to show my love, support, thoughtfulness and care. I care about the people I cook for, at the same time I care about myself while doing it. It’s the times when I’m at peace and enjoy myself the most, it’s where hours fly by without me even noticing it. It’s where I feel safe and happy, and where I can leave everything else behind for a little while. It all ties together and ends in the best moments of my life; When I get to serve and eat the food, with YOU. When we laugh and we discuss, when we talk about life and we cry, when we drink wine and we gossip, when we spend hours together, enjoying life.

This book is an attempt to invite all of you into my home and my life as a foodie. For you, to take part in all the different occasions where I tell myself “Let’s cook something really nice today”. In print, this is what it’s all about. It took me some time to translate it into words, but here we are, and I really, really hope you’ll enjoy it.

Me, my mom and my brother are far from a family of tradition. In our nature, we are a lot closer to spontaneity and have been described as, from time to time, a bit of a loud and messy family. With that said, our family dinners are as traditional as it gets and have been with us since forever. I have clear memories from my childhood of mom setting the table with her vibrant, retro Kaivo fabric from Marimekko while playing 70’s music in the background. For me, this memory is iconic.
