What you'll need
2-3 pounds chuck Roast
1/4 cup soy sauce
1/3 cup brown sugar or honey
5 pressed or minced garlic cloves
1/2 diced, onion
1 teaspoon ginger, ground OR 1 tablespoon minced or grated fresh ginger
1 tablespoon seasoned rice wine vinegar or white wine vinegar
1 teaspoon sesame oil
1/2 minced jalapeno, minced (if desired)
Homemade slaw mix
Method
1. Mix all ingredients in a mixing bowl and transfer into the pot of a slow cooker.
2. Cover and cook for 8 to 10 hours on low.
3. Take out the roast and set aside to cool before shedding with 2 forks.
4. Scoop generous quantities of the chuck roast mixture and slaw over each tortilla.
TIP: Combine a bagged cole slaw mix, a drop rice wine vinegar, pepper and salt together to make the slaw mix.
Preparation Time: 15 minutes
Cook Time: 8 hours
Serves: 6 servings
What you'll need
2 pounds (excess fat trimmed) chuck roast or pot roast
1/4 cup water
1/2 cup soy sauce
3 pressed or minced garlic cloves
1/2 cup dark brown sugar
4 (sliced into 2" pieces) green onions
2 teaspoons ginger, minced OR (1/2 teaspoon ground ginger)
1 tablespoon olive oil
1 tablespoon soy sauce
2 tablespoons cornstarch
Method
1. In a slow cooker, add ginger, garlic, brown sugar, water, soy sauce and beef.
2. Cover and cook for 8-10 hour on low.
3. Take meat out of the pot and set aside to cool.
4. Cut off excess fat and shred meat.
TIP: Cover shredded meat to retain heat.
5. Combine 4 tablespoons water and cornstarch together for the cornstarch slurry.
6. Add cornstarch slurry and shredded meat into the cooking juices in the slow cooker and stir continuously.
7. Cook until the slow cooker mixture thickens.
8. Serve meat mixture and sauce over rice, topped with cooked green onions.

Serves: 6 servings
What you'll need
2-3 pound (trimmed) chuck roast
1 sliced, green pepper
1 sliced, onion
2 beef bouillon cubes
1 1/2 teaspoon cumin
1 teaspoon salt
1 teaspoon oregano
1 tablespoon garlic, minced
1/2 teaspoon black pepper
1 lime, juiced
2 tablespoons orange juice concentrate
2 tablespoon water
Method
1. In a 6 quart slow cooker, combine and add every ingredient.
2. Secure the cooker lid in place and cook until meat is tenderized, for 8 to 10 hours on low.
3. Take meat out of the pot and set aside to cool.
4. Trim excess fat and shred meat.
5. Return shredded meat into the slow cooker and stir to combine.
6. Serve meat mixture on rolls or toasted buns with sliced avocado and mayonnaise.
Preparation Time: 10 minutes
Cook Time: 4 hours
Serves: 6-8 servings

What you'll need
3-4 pound (skins removed) chicken legs & thighs
1 tablespoon lemon or lime juice
3 tablespoons orange juice concentrate
1/2 sliced, onion
2 pressed or minced garlic cloves
1 teaspoon black pepper
1 1/2 teaspoons salt
1 teaspoon oregano
1/2 teaspoon cumin
1 teaspoon cilantro, dried
Method
1. In a large bowl or freezer bag, add every ingredient.
2. Place into a refrigerator over the night.
3. Transfer marinated chicken into the slow cooker.
4. Cook for 4 hours on high.
5. Serve over rice.
Preparation Time: 10 minutes
Cook Time: 4 hours
Serves: 4 servings
What you'll need
3-4 (cut into small chunks) chicken breasts, boneless skinless
1 can drained, pineapple chunks
1 chopped red bell pepper
Sauce Ingredients
2 tsps garlic, minced
1/3 cup sugar
1-2 tsps red pepper flakes, crushed
2 tbsps sweet red chili sauce
1 cup water
3 tbsps corn starch + 4 tbsps cold water
½ tsp salt
Method
1. Grease a slow cooker, and add pineapple, chopped red pepper and the chicken.
2. Combine the sauce ingredients into a fairly big bowl, excluding the cornstarch and water mixture (cornstarch slurry).
3. Add sauce into the slow cooker mixture and stir to incorporate.
4. Cook, covered for 4-5 hours on low.
5. Whisk the cornstarch mixture together and pour into the slow cooker for 30 more minutes before serving.
6. Stir to combine before you serve and serve over fried rice or steamed rice.
