SIMPLE VANILLA CAKE
Ingredients
1 1/2 c. sifted cake flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. unsalted butter
1 c. sugar
2 large eggs
1/2 tsp. vanilla extract
1/2 c. whole milk
METHOD
Heat the oven to 400 degrees F. Lightly coat an 8-inch cake pan with butter and dust with all-purpose flour. Sift the cake flour, baking powder, and salt into a large mixing bowl.Beat in the butter one heaping 1/4 teaspoonful at a time, using an electric mixer set on low speed, until the mixture resembles coarse sand. Beat in the sugar a tablespoon at a time, until the mixture resembles fine damp sand. Beat in the eggs one at a time. Add the vanilla and milk, and beat on medium-high, just until blended. Do not overbeat.Pour into the prepared pan and bake until a wooden skewer inserted in the center comes out clean—30 to 35 minutes. Cool cake in the pan on a wire rack for 5 minutes.Un-mold and cool completely.
MARBLE CAKE
Ingredients
2 cups all-purpose flour2 teaspoons baking powder1/2 teaspoon salt1 cup white sugar1/2 cup butter, softened2 eggs1 teaspoon vanilla extract1 cup milk2 tablespoons unsweetened cocoa powder
Method
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round pan.Place flour, baking powder, salt, sugar, butter or margarine, eggs, vanilla, and milk into mixing bowl. Beat slowly to moisten, then beat with an electric mixer at medium speed for about 2 minutes until smooth. Reserve 3/4 cup batter; pour the remainder into pan.Stir cocoa into the 3/4 cup reserved batter. Drop by spoonfuls over top of white batter. Using a knife, swirl the cocoa batter into the white batter to incorporate it in a marble effect.Bake in preheated oven for 30 to 35 minutes, until an inserted wooden pick comes out clean.
