Chapter 1: What is jerky?

First off, let’s talk a bit about what jerky really is. Most of you have had a lot of jerky over the years while some of you might be trying it out for the first time. But do you really know anything about it other than the fact that it’s a popular snack made of meat?

Ages ago, jerky was initially discovered while attempting to preserve meat in a better and long lasting way. Like many other types of food, it was realised that drying meat will help to control how long the meat can last.

Hence, lean pieces of meat were cut and any parts like fat, which were more prone to spoilage were trimmed off. This meat was then dried to prevent the growth of bacteria as it would spoil the meat faster.

This method of preserving meat was done in different places in slightly modified ways but the end result was some delicious jerky for everyone to eat. Since then it has become a popular savoury snack.

Jerky can be made from many different types of meat. It could pork, turkey, goat, bison, beef or other more exotic meat like camel, ostrich and emu’s. But despite all having their own unique taste and appeal, beef jerky has been known to be the most popular type that people prefer.

We shall now focus more on beef jerky as we explain how to prepare it in many different ways.
