In this section, we sample some of the all time classic and simple recipes that have been tried and tested and survived all this while.
Ingredients:
4 cups flour
225g butter, unsalted
3 teaspoons baking powder
1 teaspoon salt
4 large eggs
1 cup milk
2 teaspoons vanilla essence
2 cups sugar
4 cups blueberries, fresh or frozen
Method:
Preheat the oven to 180°C and prepare the muffin trays.
In a large mixing bowl, sift the dry ingredients together.
Dust the blueberries with a teaspoon of the dry mixture so they don’t sink to the bottom while baking.
Combine the butter and sugar using a beater or an electric mixer. Gradually add the eggs and then the vanilla essence.
Mix the dry ingredients and the liquid mixture together, and fold in the blueberries. Do not mix too much.
Bake for about half an hour or until a skewer/knife inserted in the muffins comes out clean.
Let the muffins cool on a wire rack and then serve.
Ingredients:
4 ½ cups oat bran
4 egg whites
4 tablespoons honey
1/2 cup walnuts, chopped
2 tablespoons baking powder
1/2 cup brown sugar
2 ½ cups milk
4 bananas, mashed
Method:
Prepare your muffin tin by lining it with paper cups. Preheat the oven to 215°C.
Whisk the dry ingredients together in a bowl, i.e, the oat bran, baking powder and the sugar.
Mix the remaining ingredients i.e. the egg whites, milk, honey and mashed bananas in a separate mixing bowl.
Combine the wet and dry mixtures and mix well till combined. Add the walnuts.
Spoon the muffin mix into the 24 muffin cups. Bake for 10-15 minutes or until the knife inserted in the muffins comes out clean.
Transfer the muffins onto a wire rack so they can cool down.
Ingredients:
12 tablespoons of butter, unsalted
8 ounces of roughly chopped bittersweet chocolate
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt

2 large eggs
2 teaspoon pure vanilla extract

2/3 cups of cocoa powder, unsweetened
2 tablespoons baking powder
Method:
Heat the oven to 190°C. Prepare the muffin cups and spray the muffin pan with oil or butter.
Combine the butter and half the quantity of chopped chocolate in a bowl over a saucepan of simmering water. Once mixed smoothly, remove from heat.
Mix the flour, cocoa powder, baking soda, salt and sugar together in a large mixing bowl.
Mix the liquid ingredients, i.e. the egg, buttermilk and vanilla extract well in another bowl.
Pour the butter-chocolate mixture and the egg mixture into the dry ingredients and mix gently. Do not over-mix.
Add the rest of the chopped chocolate.
Pour the batter into the muffin cups and bake for 20 minutes or until the muffins are well cooked. Insert a knife to check if they are baked properly. If the knife comes out clean, your muffins are done.
Cool on a wire rack for 5 minutes.
