INTRODUCTION

Thank you for purchasing the book, ‘Low Carb Paleo Baking Cookbook’.

There are so many people all over the world who have always wanted to stick to consuming desserts when they are on their diets. They walk past stored that showcase numerous desserts of different kinds and they find themselves drooling. There are chocolates, muffins, cakes, breads and cookies! The unfortunate fact is that we let ourselves avoid looking at them on the pretext that we will be tempted to consume them. But, this book contains a surprise for every person who is on a diet!

The book contains numerous recipes for breads, muffins, cupcakes and numerous other desserts. You will be glad to learn the fact that there ARE desserts that you can consume! You do not have the need to worry about gaining weight when you consume these foods. I hope you enjoy every mouthwatering recipe that has been given in the book.

CHAPTER 1: RECIPES FOR PALEO BREADS

PALEO DINNER ROLL

Servings: 12 rolls

Ingredients

3 cups chopped Green Plantain

½ cup Olive Oil (Extra Virgin)

1 tsp. salt

2/3 cup Coconut milk (If you do not have any coconut milk with you at home, you will need to mix ¼ cup water with 1 tsp. Extra virgin olive oil)

2 cups Otto’s Cassava Flour (Or any other brand of Paleo flour which has a low amount of carbohydrates)

Method

You will first need to preheat the oven to 400 degrees Fahrenheit.

In a blender, you will need to blend the coconut milk, salt, olive oil and the plantain. You will need to blend well till you obtain an extremely smooth puree.

Now, transfer the puree into a separate bowl and add the flour to the bowl. You will need to whisk the ingredients together to ensure that you obtain sticky dough.

You will need to separate the dough into twelve parts and then roll each of them into balls. Make sure that the balls are not too big.

Prepare a baking sheet by greasing the surface of the sheet with olive oil. You will now have to transfer the twelve balls onto the baking sheet. You could also make designs on top of the twelve balls if you want to.

You will need to bake the balls in the oven for thirty minutes.

When the time is up, you will need to remove the sheet from the oven and leave the rolls to cool before you serve.

PALEO TORTILLAS

Servings: 6

Ingredients

1 cup Otto’s Cassava Flour

1 tsp. salt

¼ tsp. Cream of Tartar

¼ tsp. making soda

1 cup warm water

4 tbsp. Olive oil (Extra Virgin0 or Avocado Oil

Method

You will need to combine the salt, flour, baking soda and the cream of tartar in a small mixing bowl. You will also need to add the oil to the bowl followed by the water and mix the ingredients together using your hands or using a wooden spoon. You will need to mix till you have obtained dough, which is stiff. If you find that the dough is sticky, you will need to add more flour while if the dough is too crumbly, you will need to add the oil.

Now, divide the dough into three parts and then divide each part into half to obtain six portions that equal. You will need to make each of these pieces into a ball.

You will need to use a piece of parchment paper and place the ball of dough on it. Now, flatten the ball using your hand while ensuring that it is as flat as it can be. You will now need to cover the flattened dough using another piece of parchment paper. Using a roller, you will need to roll the dough flatter into the shape of a circle. You will now need to remove the flattened roll of dough and leave it aside while you do the same with every other ball of dough.

You will need to preheat the oven to 300 degrees Fahrenheit. When the oven has preheated, you will need to place the pieces of dough on a baking sheet and then place the baking sheet in the oven. Make sure that you cook each side for three minutes each. You will need to flip the dough once the bottom of the tortilla has turned pale brown and there are a few bubbles on the top. You will need to do this with every tortilla that you have prepared. Once the tortillas have been cooked, you will need to place them in a container to keep them hot.

You could serve the tortillas warm or cold a little later. You could leave the tortillas in the freezer if you want to too. You could use these sometime in the future if you want to!

CINNAMON BUNS

Servings: 20 buns

Ingredients

For the Filling:

2/3 cup butter (If you do not want to use butter, you could use ghee or lard)

12 tbsp. sugar (You could use maple syrup or honey if you want to avoid using any sugar in your dish)

4 tbsp. Cinnamon

1 tsp. cardamom

Butter (For greasing)

For the Bread:

3 cups pecans and ground walnuts

6 cups Almond Flour (It is always good to use finely milled flour since that is the simplest form of flour)

2 cups tapioca

10 eggs

2/3 cup butter

2 tbsp. Apple Cider Vinegar

2 tsp. Salt

2 tbsp. Honey or Maple Syrup

½ cup Warm water

4 tsp. Dry Yeast (ensure that it is active)

Method

For the filling

You will need to mix all the ingredients in a small mixing bowl. If you use sugar, you will obtain a fine, grainy substance. But, if you use maple syrup, you will obtain a slightly sticky filling.

For the bun

You will first need to preheat the oven to 300 degrees Fahrenheit.

You will have to first bring every ingredient to the room temperature. Ensure that the butter has melted well too.

You will now need to proof the yeast. In order to do this, you will have to combine honey, warm water and the yeast in a bowl. You will find that it is foaming in the next fifteen minutes.

While the yeast is proofing, you will have to take the ingredients that are left and place them in the bowl. You will need to blend the mixture. Now, add the yeast to the bowl and mix the ingredients well on low speed. You will need to do this for at least ten minutes.

When you are done with mixing the ingredients, you will need to take a baking sheet and grease it well with the butter.

You will need to take two parchment papers and grease them well with the grease. Now, move the dough onto the parchment sheet and begin flattening the dough that you have made using your hands. If the dough begins to stick too much to your palms, you will need to sprinkle a little dough on your palms and then flatten the dough.

Spread the butter on top of the rectangle that you have made and sprinkle the mixture you have made for the filling on top of the rectangle.

Begin to roll the dough you have made to form a log. You will need to be extremely careful to ensure that the thickness of the sides is the same.

Take a sharp knife and cut the log into thick or thin slices the way you prefer it. You will now need to transfer the cut pieces onto the baking sheet. You will need to keep them a little apart on the baking sheet. You could cut how many ever buns you want to. You could either cut big or small buns. It is all right if the buns do not seem perfect at all. You will find that the buns all taste extremely good!

You will need to let the buns rise in the corner for at least forty minutes. You do not have to worry about whether or not the buns will rise too much. They will end up puffing up when they are left to bake.

You will need to place the sheet in the oven and bake the buns for at least forty minutes. If the buns are small, you will need to bake them for a shorter period of time.

Serve them warm and enjoy!
