Buttery Bread Rolls

Ingredients

YIELD

24 rolls

1 cup

warm milk (70 to 80 degrees F.)

1⁄2 cup

butter or 1⁄2 cup margarine, softened

1⁄4 cup

sugar

2

eggs

1 1⁄2 teaspoons

salt

4 cups

bread flour

2 1⁄4 teaspoons

active dry yeast

Directions

In bread machine pan, put all ingredients in order suggested by manufacturer.

Select dough setting.

When cycle is completed, turn dough onto a lightly floured surface.

Divide dough into 24 portions.

Shape dough into balls.

Place in a greased 13 inch by 9 inch baking pan.

Cover and let rise in a warm place for 30-45 minutes.

Bake at 350 degrees for 13-16 minutes or until golden brown.

Dinner Rolls

Ingredients

water, plus

1 tablespoon

water (70-80 F)

large egg

4 1⁄2 teaspoons

vegetable oil

3 1⁄4 cups

bread flour

1⁄4 cup

sugar

1 1⁄2 teaspoons

salt

2 1⁄4 teaspoons

instant yeast

2 tablespoons

melted butter (for dinner rolls only) (optional)

2 tablespoons

shortening (for dinner rolls only) (optional)

Directions

In bread machine pan, place all ingredients from flour through yeast in order as recommended by the manufacturer.

Select the basic bread setting.

Check dough after 5 minutes of mixing, if needed add 1-2T of water or flour.

Bake as normal.

For dinner rolls.

Mix in bread machine but use only the dough option.

Lightly grease a 9 x 13 baking pan (I always use a metal pan).

When dough is finished shape into 15 uniformly sized balls. I always grease my hands with shortening to smooth the dough out and it helps keep the dough from drying out.

Cover and let the rolls rise in a warm, draft free place until raised to the desired size.

I let them about double in size.

Bake in a 350° oven about 12-15 minutes until golden brown.

After removing from the oven, brush the tops of the rolls with melted butter.

Take out of pan and let completely cool before storing.

Easy Pizza Dough

Ingredients

1-2 pizzas

2 teaspoons

dried granulated yeast

3 cups

bread flour

1 teaspoon

salt

2 tablespoons

sugar

2 tablespoons

olive oil

1 cup

water, plus

2 tablespoons

water

Directions

SOME PIZZA TOPPING IDEAS.

Caramelized onions and roasted garlic.

Mozzarella cheese, Camembert, Romano and Feta (for a really, really cheesy pizza!).

Equal parts of basil pesto and olive oil mixed together with Parmesan or Romano cheese.

Plus some roughly chopped sundried or SEMI-dried tomatoes, sliced black olives and LOTS of grated Mozzarella cheese, salt and lots of freshly ground black pepper!

Cranberry jelly, shredded chicken, sliced Brie!

Mozzarella cheese, shredded chicken and sliced avocado!

THE BREAD.

Place all the above ingredients in the order I have listed into the bread machine.

Select the dough cycle and press start!

When the dough cycle is complete, take the dough out of the machine and place in well greased bowl, and roll the dough around (in the bowl) thus 'coating' it in oil.

Cover and leave to rise in a warm place for about 1/2 an hour.

Knead the risen dough lightly.

To shape and bake: roll the dough into a circle.

Place on well greased baking tray or pizza pan.

Then add a topping of your choice and bake at 225'C.

NOTE: for a nice crisp and very thin pizza, bake BEFORE adding the topping AND after!

Hamburger Buns

Ingredients

milk, slightly warmed

beaten egg

2 tablespoons

butter

1⁄4 cup

white sugar

3⁄4 teaspoon

3 3⁄4 cups

bread flour

1 1⁄4 teaspoons

active dry yeast

Directions

Place all ingredients, except butter, in pan of bread machine according to manufacturer's directions.

Select dough setting.

When cycle is complete, turn out onto floured surface.

Cut dough in half and roll each half out to a 1" thick circle.

Cut each half into six 3 1/2" rounds with inverted glass as a cutter.

Place on greased baking sheet far apart and brush with melted butter.

Cover and let rise until doubled, about one hour.

Bake at 350° for 9 minutes.

Note: Oven temperatures vary so check after 9 minutes to see if done.

Some reviewers baked these anywhere from 12 to 30 minutes.

Best Raisin Bread

Ingredients

milk

1 cup

warm water (must be between 110-115 degrees)

(1/4 ounce) packages active dry yeast

white sugar

1 teaspoon

salt

1⁄2 cup

unsalted butter, softened

1 cup

raisins

8 cups

all-purpose flour

2 tablespoons

milk

1 cup

white sugar

3 tablespoons

ground cinnamon

2 tablespoons

butter, melted (approx.)

Directions

Warm the milk in a small sauce pan on the stove until it just starts to bubble, stirring occasionally.

Remove from heat.

Let cool until lukewarm, about 120-125 degrees.

Dissolve yeast in warm water and set aside until yeast is frothy, about 10 minutes or so (make sure your water is at the correct temperature or the yeast won't activate.) Then mix in eggs, sugar, butter salt and raisins (stir in the cooled milk slowly so you don't cook the eggs.) Add the flour gradually to make stiff dough.

Knead the dough on a lightly floured surface for a few minutes until smooth.

Place in a large, buttered, mixing bowl and turn to grease the surface of the dough.

Cover with a warm, damp cloth and let rise (I like to let my bread rise in the oven with the light on.

It has just the right amount of heat and keeps the bread out of drafts.) Allow to rise until doubled, usually about 1 1/2 hours.

Roll out on a lightly floured surface into a large rectangle 1/2 inch thick.

Moisten the dough with 2 tablespoons milk and rub all over the dough with your hands.

Mix together 1 cup of sugar and 3 tablespoons cinnamon and sprinkle mixture evenly on top of the moistened dough.

Roll up tightly (the long way).

The roll should be about 3 inches in diameter.

Cut into thirds, and tuck under ends and pinch bottom together.

Place loaves into well greased (you can use Crisco or butter for this) 9 x 5 inch pans and lightly grease tops of loaves.

Let rise in warm place, uncovered, again for about an hour.

Bake at 350 degrees for 45 minutes or until loaves are lightly browned and sound hollow when tapped.

Remove from oven and let cool on rack.

Take melted butter and spread over tops of loaves.

After about 20 minutes, lay loaves on their sides and remove from pans.

Allow to cool before slicing.

Cinnamon Raisin Bread

Ingredients

1 1.5 pound loaf

1 cup

water

2 tablespoons

margarine

3 cups

flour

3 tablespoons

sugar

1 1⁄2 teaspoons

salt

1 teaspoon

cinnamon

2 1⁄2 teaspoons

yeast

3⁄4 cup

raisins

Directions

Add all the ingredients in order given except the raisins.

Add raisins in on the "add in" beep.

Bake on "sweet bread" setting.

Rustic Bread

Ingredients

1 large loaf

1 cup

warm water

olive oil

3 cups

bread flour or 3 cups all-purpose flour

2 teaspoons

granulated sugar

3⁄4 teaspoon

salt

2 teaspoons

active dry yeast

cornmeal, for baking sheet

1

egg white, slightly beaten

Directions

Add flour, oil, salt, sugar, yeast and water to your bread machine according to its instructions.

Set on dough setting.

Always follow your machines instructions, when mixing open it and keep check on the dough. Dough should be in a nice round soft sticky to the touch ball. If it is not add more water, or add flour whichever is needed.

Remove when signal beeps and cycle is done.

Preheat oven to 375°F.

Sprinkle corn flour or cornmeal onto a baking sheet.

Punch dough down and form into a long or oval loaf.

Cover and let rise for 25 more minutes.

It should be doubled again by this time.

Uncover and slash the top with a sharp knife or razor.

Brush all over with the beaten egg white.

Bake 25 minutes to 35 minutes, until hollow sounding when tapped on bottom.

Cool.

Fail proof Bread

Ingredients

bread flour

1 teaspoon

(1/4 ounce) package active dry yeast

1 1⁄4 cups

warm water

Directions

Place ingredients in bread machine according to manufacturer’s directions.

Start machine on dough setting.

When dough cycle is complete, remove dough with floured hands and cut in half on floured surface.

Take each half of dough and roll to make a loaf about 12 inches long in the shape of French bread.

Place on greased baking sheet and cover with a towel.

Let rise until doubled, about 1 hour.

Preheat oven to 450°.

Bake for 15 to 20 minutes or until golden brown, turning pan around once halfway during baking.

Remove baked loaves to wire racks to cool.

Bread Cinnamon Buns
