A ham cooker, also known as a ham witch, is a cooking vessel in which you can make boiled sausage. It consists of the basic body, a slim and high pot, and a pressure plate and lid.
There is usually a hole in the lid through which you can insert a penetration thermometer to measure the temperature of the sausage.
The sausage mass is filled into the pot, the pressure plate is put on top and the whole thing is closed with the lid.
The spring of the pressure plate hits the lid and is pressed down so that the sausage mass cannot expand too much when scalding.
